2 T extra-virgin olive oil...
1 t grated lemon zest, plus 2 T fresh lemon juice....from same zested lemon...
1 t Dijon mustard...
1/2 t salt...
1/4 t fresh ground pepper...
1 can, 15 oz., unsalted cannelloni beans, rinsed and drained...
1/4 cup thinly sliced red onion...
3 cups firmly packed baby arugula leaves...

Directions:

Combine olive oil, zested lemon rind, lemon juice, mustard, salt and pepper in a large bowl,
Stirring with a whisk...
Add the beans and onion, tossing well to coat...
Add the arugula, toss gently to combine all...
Serve!
