3# potatoes
3 eggs separated
1/2 stick melted margarine
Salt and Pepper
Flour
Bread crumbs
Oil for frying
**This is a great dish to use left over mash potatoes**

Directions:
Directions:
Peel potatoes and boil. Drain and mash very fine. Add melted margarine.
Add 3 egg yolks / saving whites.
Salt and pepper to taste.
When potatoes are cooled, form them into "thumb" sized pieces.
Roll in egg white then bread crumbs.

Fry, turning til golden brown.
