2 tbsp olive oil
1 1/2 lbs ground beef or turkey to make it a bit healthier
salt & pepper
1/2 tsp allspice (if using turkey use Bell's seasoning)
4 cloves of garlic chopped
1 large onion chopped
3 peppers ( I usually use red or orange) diced into bite size pieces
1 quart chicken stock
1 28 oz can crushed tomatoes
1 cup orzo
Grated Parmesan cheese

Directions:
Directions:
Heat a medium soup pot over medium-high heat with olive oil. When the oil is hot add meat and season with salt, pepper and allspice. Brown the meat for 5 minutes then add garlic, onion, peppers and cook 7-8 minutes, until tender.

Stir in stock and tomatoes and bring to a boil. Add the orzo and cook another 10 minutes or until the pasta is cooked to your liking.

Serve with grated parmesan.

This is a Rachael Ray recipe that I tweaked to my liking. It is a great hearty stoup for the winter.
