3-4 pounds potatoes
1 lb bacon
1 large sweet onion (Vidalia)
1/2 C vinegar
1 Tbs sugar
Bacon drippings
Salt and pepper

Directions:
Peel potatoes and boil until soft but firm. Fry bacon until crispy. Remove bacon and drain, reserving the bacon drippings. Chop onion. Cut potatoes into bite-size pieces and put the onions on top of the potatoes. Crumble bacon over the potatoes and onions.

Mix the vinegar, bacon drippings, sugar, salt and pepper in a small bowl and mix with a wire whisk. Taste the dressing and adjust sugar, vinegar and salt until the dressing is sweet/sour balanced to preference.

Pour over potatoes, bacon, and onions and allow to marinate for several hours at room temperature. Mix just before serving.

This was a recipe that my mom, Marcia Kelnhofer, used to make for us in the summer. My dad, Claude, loved this recipe. I didn't care for it but as I grew I came to love it as well.

I usually made the traditional potato salad but this one was especially fun when we had German sausage with sauerkraut. A nice change of pace . . .
