3 – 4 pounds potatoes, peeled
1 large sweet onion (Vidalia), chopped
3 – 4 ribs celery, chopped
3 – 6 eggs
¾ cup vinegar
1 ½ cups mayonnaise
1 tsp yellow prepared mustard
1 tsp sugar
Salt
Pepper
Paprika

Cook potatoes until tender. Just before finishing, submerse the eggs in and hard boil them for approximately 5-8 minutes. (You can leave the peel on and save yourself some peeling. Just let the cooked potatoes cool and the skins mostly slide off.) Dice potatoes into bite-sized pieces. Add onions and celery. Peel eggs and slice, add to potatoes.

Mix the remaining ingredients and season to taste. Add to potato, onion, celery and egg mix and stir gently.

If you wish you may add some green or red pepper for color. Sprinkle with paprika and serve immediately.

This is a classic potato salad that goes well with almost any summer supper. When I was cooking for the family I used to throw it together without measuring. (That's why I love cooking more than baking . . . you don't have to be so precise.)

I don't think I would try that now.
