Ingredients: 5 pounds of potatoes 1 – 2 sweet onions (Vidalia), chopped 1 can Carnation Evaporated Milk Butter Salt Fresh ground pepper

Directions: |
Directions:Peel potatoes and cover with water. Add onions and cook on high until they boil. Reduce heat and continue cooking until potatoes are soft. Remove from heat and drain most of the water. Coarsely mash the potatoes into small irregular chunks and a moist slurry of potato. Add one stick of butter to potatoes and allow to melt. Add milk and mix. If you wish the soup to be less solid, add more milk to reach desired consistency. Salt and pepper to taste.
The cracked pepper is important.
Serve immediately with crusty bread and cole slaw. |

Notes: I was given this recipe from a boss I had worked for at Wright-Patterson AFB in the 80's. He was a really good man from West Virginia that used to tell us about growing up in the holler, shooting squirrels and bringing them home for supper.
I never considered the need to put squirrel on the table, thank goodness but his stories about coming home on a cold night to a big pot of Potato Soup were very appealing. I wasn't sure that a meatless soup would be enough but everyone loved this hearty, chunky soup. Thank you, Bill Johnson. You were a very, very good boss.
