1 small onion, diced
2 cloves of garlic
3 (28 ounce) cans of plum tomatoes
14 ounces (can) chicken broth
1/4 teaspoon crushed red pepper flakes
16 ounces of penne pasta
16 ounces of Havarti cheese, shredded
Parmesan cheese, for sprinkling
Olive oil

Directions:
Preheat oven to 350 degrees. Sauté onion and garlic with olive oil in a large pot until the onions are soft. Drain plum tomatoes; add to onion and garlic, and cook for 10-15 minutes, breaking up tomatoes as they cook. Reduce heat; add chicken broth, and simmer 20-25 minutes until the tomatoes have cooked down. Add crushed red pepper flakes.

Meanwhile, bring a pot of water to boil and cook pasta in boiling water, according to package instructions. Drain. Add the shredded Havarti cheese to the cooked pasta and stir with a greased spoon. Add the sauce to the pasta and cheese, and mix together in a greased 9 x 13" pan.

Sprinkle with Parmesan cheese and bake at 350 degrees for 10 minutes.

This is a Baker family favorite! My mom makes it every year for Christmas Eve dinner and nearly every time my sister, Kristina, and I are visiting home in Connecticut. She usually serves it with hot and/or sweet Italian sausage links and a salad.
