2 -3 Lbs. of Shrimp, peeled and deveined

Olive oil to cover the bottom of the pan

4 (or more) cloves of garlic, minced

1 small onion, minced

1 bunch of fresh parsley, finely chopped

2 cans of chicken broth or stock

2 cans of diced tomatoes ( I use the ones with garlic and oregano)

salt and pepper to taste

Coat the bottom of a large sauce pan with olive oil and heat.

Add garlic and onion and saute till translucent.

Add cleaned shrimp and cook till just pink. Remove from pan and set aside.

Place chopped parsley into pan and add chicken broth. Simmer until parsley is soft and broth is reduced by about 1/3.

Add tomatoes and simmer another 10 minutes.

Put the shrimp back in and heat through but don't over cook!

Serve over linguini or your favorite pasta. Don't forget some "nice bread" to sop up all the goodness!
