1/2 c. icing sugar or finely granulated sugar (berry sugar)
1 c. butter
2 1/4 c. flour
1/4 c. rice flour
1/2 tsp. salt

Directions:
Directions:
Place firm butter in large bowl. Sift flours, sugar and salt together, then gradually sift again over butter. Cream together with hands until all of the sugar/flour mixture has been added. Knead for 5 minutes. Make into rolls and chill a little (not until its firm because it will not cut cleanly for baking. Slice and bake at 325 degrees until edges of shortbread look pink, about 12 to 15 minutes.
