1/2 cup unsweetened applesauce
1/4 vegetable oil
3/4 cup packed brown sugar
1 tsp vanilla extract
3 bananas, mashed
2 cups whole wheat flour
1 tsp baking soda
1/2 tbsp cinnamon
1 cup chopped frozen strawberries

Directions:
Directions:
Preheat oven to 375. In a large bowl mix eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine flour, baking soda and cinnamon; stir into the banana mixture until moistened. Stir in strawberries until evenly distributed. Spoon batter into greased muffin tins. Bake 20 minutes or until the tops spring back when lightly pressed. Cool, remove from tins.
