I box of elbow macaroni
I bag of Gardein brand beefless ground crumbles (available at Publix)
4 T. olive oil
I container of Tofutti brand dairy-free sour cream (available at Publix)
paprika powder
salt
Directions:
Directions:
Heat up frying pan and add about 4 T. of olive oil. Then add the bag of Gardein brand beefless ground crumbles and cook of medium heat until done. Add salt to taste.

In a separate pot, cook the eblow macaroni and drain. While still warm, add the "beef" mixture and mix well.

Add most of the container of Tofutti dairy-free sour cream and mix well.

Add plenty of paprika to add color and more flavor. Add salt to taste.

Serve in a dish with a big dallop of the rest of the Tofutti sour cream and sprinkle with lots of paprika and salt to taste. Looks beautiful and tastes great!

This is a vegan version of a common Swiss recipe that my students from Switzerland taught me how to make. I think the vegan version is even better! Real "comfort food".
