1 lb Boneless skinless chicken breast Thin cut.
1/3 c flour
1 t Tony Chachere's Creole Seasoning
1 T olive oil
1 (10oz) can Original Rotel tomatoes
1/4 c diced sweet pickles
2 T red wine vinegar
2 T drained capers
2 cloves garlic, crushed

Freezer Prep: Put chicken breasts in a freezer baggie. Mix flour and creole seasoning in a snack size baggie. Bag up tomatoes, sweet pickles, vinegar, capers, and garlic. Put all baggies in a gallon size freezer bag and freeze.

Cooking prep: Thaw in Refrigerator.

Pat Chicken Dry. Dredge chicken in the flour mixture shake off extra. Heat oil in a skillet over medium high heat. Cook chicken in oil about 2-3 minutes per side until they are golden brown. Add tomato mixture. Cover and simmer about 10 minutes.
