1 baked pie crust
1 cup sugar
1/3 cup flour
1/2 t. salt
2 egg yolks
2 cups milk
1 T. butter
1 t. vanilla or coconut extract
3/4 cup shredded coconut
Whipped cream

Directions:
Directions:
Combine sugar, flour and salt. Beat egg yolks and add milk, butter and extract. Mix all ingredients in a saucepan and bring to a boil. Let boil for 2 minutes. Take off heat and fold in coconut. Let cool. Pour in pie crust and top with whipping cream.
