1/2 c. firmly packed brown sugar
1/4 c. butter softened
1 8-oz. carton (1 cup) sour cream
2 eggs
1 c. (2 medium) shredded carrots
1/2 c. flaked coconut
1/2 c. raisins
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon

Directions:
Directions:
Heat oven to 375F.
In large mixing bowl, combine sugar and butter. Beat at med. speed, scraping the bowl often, until well mixed (1 - 2 minutes).
Add sour cream and eggs.
Continue beating, scraping bowl often, until well mixed (1-2 minutes).
By hand, stir in carrots, coconut and raisins.
In med. bowl, stir together flour, baking soda and cinnamon.
Add flour mixture to sour cream mixture; stir just until moistened.
Spoon into greased muffin pan.
Bake for 20-25 minutes or until lightly browned.
Makes one dozen.
