2.5 lb Smoked Ham - Cubed / Diced
6 Med Potatoes, cubed small
4 Cans Green Beans, drained
64 Oz. Chicken broth
1/2 XL yellow onion, chopped
1.5 Tbsp cracked black peppercorn, or coarse blk pepper
1/2 Carrot
1/2 Celery stalk
2 Cloves garlic, minced
1 Bay Leaf
Herb de Provence seasoning

Directions:
Directions:
Add ingredients to crock pot. Set to high for 30 min, then reduce to low for 4 hours, or until potatoes are tender. Fish out carrot and celery. Skim off any floating fat. Season with Herb De Provence to taste. Salt is NOT necessary. Optional, saffron. I add Argo to bring to desired consistency. Serve with French or Italian bread with nice butter. Serves 10-12.
Great stew for colder months. Enough for family meal today and one to freeze.
