3 pound boneless pork loin, trimmed
3 cloves garlic, thinly sliced
2 tablespoons fresh rosemary OR: 2 teaspoons dried
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Preheat oven to 350º.
Make small slits with sharp knife on all sides of pork. Insert garlic and rosemary leaves into slits. Rub meat with olive oil. Sprinkle with the salt and pepper. Place meat on a rack in roasting pan.

Roast in Preheated 350º oven until meat thermometer inserted in roast registers 160º, 1 1/2 - 2 hours.
