1 cup sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 1/2 cups unsalted dry-roasted peanuts
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Directions:
Directions:
Combine sugar, corn syrup and salt in 8-cup glass measure or bowl.
Microwave on high for 5 minutes. Stir in peanuts. Microwave for 2 to 6 minutes or until syrup and peanuts are light brown, stirring every 2 minutes. Add butter, vanilla and then baking soda; stir until light and foamy. Working quickly, spread 1/4" thick on buttered cookie sheet. Let stand until cool, 40-60 minutes. Break into pieces. Store in air-tight container in a cool place.

Variation: Use 1 to 1 1/2 cup unhealed sesame seeds in with butter and vanilla.
Add unsalted microwave popcorn to those basic ingredients, and you get another fall favorite.
