4 plum tomatoes, chopped (may substitute Roma; either way, scoop out the seeds to keep from getting too soggy)
3 tablespoons red onion, finely chopped (may substitute white onion)
2 garlic cloves, minced
5 ounces feta cheese, crumbled (entire 6 ounce package is fine)
1 – 2 tablespoons fresh parsley, chopped
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon salt (to taste)
4 avocados, chopped

Directions:
Directions:
Stir together the tomatoes, onion, garlic, feta, parsley, red wine vinegar, olive oil, oregano, and salt. If the salsa seems dry, you may choose to add an extra tablespoon of red wine vinegar and extra tablespoon of olive oil.

While the recipe recommends to gently stir in the avocado just before serving, you can also add in the avocado hours in advance.

Serve with tortilla chips or pita chips.
