2 Large Potatoes, Peeled and Cut Into 1-inch Chunks
2 Zucchini, Cut into 1-inch Chunks
2 Yellow Squash, Cut Into 1-Inch Chunks
1 Red Bell Pepper, Seeded and cut into 1-inch Chunks
1 Large Onion, Cut Into Chunks
1 Pound German Sausage, Cut Into 1-inch Slices
2 Tablespoons Olive Oil
2 Cloves Garlic, Minced
14.5 Ounce Can Diced Tomatoes, Drained
Salt and Pepper, To Tast

Directions:
Directions:
Preheat over to 375º.

Spread potatoes, zucchini, squash, bell peppers, onions, and sausage slices evenly on a cookie sheet.

Sprinkle olive oil, minced garlic, and diced tomatoes over vegetables and sausage. Season with salt and pepper.

Bake in oven for 1 hour.
