5 pounds of potatoes
Milk, warmed to keep potatoes from getting cold when mixed
Butter
Salt
Pepper
Chicken Broth (for cooking the potatoes)
8 ounce package cream cheese

Directions:
Directions:
Peel potatoes and cut into uniform sizes. Place in Dutch oven or stock pot. Cover with water and bring to boil. Reduce heat and cook until potatoes are soft. Drain (reserving chicken broth) and mash, adding cream cheese, butter and milk (or reserved broth) to reach desired consistency. If you like, you may wish to use a hand mixer to whip the potatoes to remove all lumps. Salt and pepper to taste.

You can make smashed potatoes by cooking washed, unpeeled potatoes and mashing them in the same way.

Serve immediately. If you are preparing a large meal with many items, these should be the last thing before serving so potatoes can really shine.

Mashed potatoes are a favorite at Thanksgiving but really good comfort food any time. My original recipe had the potatoes boiled in water but I ran across this one that uses chicken broth or stock which adds another layer of flavor. The cream cheese is also a nice touch that gives the potatoes a creamy texture and some body without getting in the way of the potatoes. These are good even without the gravy.
