Rich and Charlie's Salad Recipe

Mary Ringering


3/4 cup olive oil
2 cloves garlic minced
4 ounces pimento chopped
1/2 cup red wine vinegar
1/2 small red onion grated

1 medium head lettuce
1 cup hearts of palm, sliced
1 medium red onion sliced very thin
1/2 to 3/4 cup Parmesan cheese
1 head Romaine Lettuce
1 cup artiichoke hearts, drained and halved

-Mix dressing several hours in advance. You may shake - holds for up to 6 weeks.

-Tear heads of lettuce and mix with palm, artichokes and onion
-Sprinkle with Parmesan
-Pour dressing over all and toss
-Chill 20 minutes before serving
