Crab Augratin Recipe

6 T. butter
6 T. Flour
Small red pepper mince
1-2 celery mince
1 shallot mince
1-2 green onion chopped
1/4 t. Pepper
1/2 t. Salt
3 c warm half and half
3 oz sherry
1/2 t. Cayenne
2-3 c. Grated cheese like American or Gruyere
1 lb crab (jumbo lump is best)
1/2 c. Panko mixed with 2 T. Melted butter, Parm, parsley
2 T. Cheese for the top

Oven 350
9 X 13 pan
Large Saute pan, cook veggies in butter until soft. Add seasonings. Add flour and cook for few minutes. Add hot half and half and cook for few minutes to thicken.
Add sherry. Then add chese and mix.
Add crab gently.
Put in pan. Top with Panko mix and chest.
Bake 20-30 minutes
