Pumpkin Roll Recipe

1 cup sugar
2/3 cup pure pumpkin
3 eggs
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3/4 cup flour


1 8oz softened cream cheese
1 cup powdered sugar
1 tsp vanilla
2 tsp softened butter

Mix first seven ingredients - beat with electric mixer for 5 minutes

Line cookie sheet with greased parchment paper
Bake 20 minutes at 350

As soon as pumpkin roll is out of oven, roll it up in the parchment paper and allow to cool.

Beat filling ingredients together - spread on cake. Immediately roll cake back up and allow to sit. Refrigerate.
