12 oz. Linguine
1 can (28 oz.) Tomatoes with Basil
1 Can Artichoke Hearts
1 cup Onion, chopped
2 cloves Garlic, minced
3 Tbsp. Olive Oil
1/4 cup Capers (optional)
1/4 cup Tomatoe Paste
8 fresh Basil Leaves
2 tsp. Sugar
1/2 tsp. Salt
1/4 tsp. Pepper
Parmesan Cheese, grated

Cook Linguine according to package directions.
Meanwhile, coarsely chop tomatoes, reserving liquid. Drain artichokes reserving 1/4 cup of liquid. In a large skillet, saute onion and garlic in 2 Tbsp. of oil until tender. Add the tomatoes, artichokes, capers, paste, basil, sugar, salt, pepper and reserved liquids. Bring to a boil and reduce hear. Simmer uncovered 10 minutes or until slightly thickened. Add 1-2 ladles of pasta water to sauce as it is reducing. Toss cooked linguine, sauce and 1 Tbsp. olive oil together and serve. Sprinkle with cheese.
