1/4 c almond flour
1/4 c coconut flour, sifted
2 tbsp arrowroot flour
1/2 tsp baking soda
1 tsp cinnamon
2 tsp ground cardamom
Pinch of salt
1/2 c pumpkin purée
5 eggs
1/2 tsp vanilla
2 tbsp maple syrup
1/2 c coconut milk

Directions:
Directions:
In a medium bowl combine dry ingredients. Add the wet ingredients to the dry ingredients and mix until well combined. Can store the batter in a container in the fridge until required. The day of serving add water a little at a time to the batter until get tradition pancake batter consistency. Add coconut oil to a pan over medium heat. Pour patter into the pan. Cook pancakes until they bubble approximately 3-4 min per side.
