3-4 Sweet Potatoes, peeled and cut into 1" pcs.
1/3 cup Honey
3 Eggs
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
1/8 tsp. Ginger
1 Tbsp. Brown Sugar
1/3 cup Pecans, finely chopped
1/2 tsp. Cinnamon

Directions:
Preheat over to 350º. Spray 8-9" square pan with cooking spray. Cook sweet potatoes until fork tender 20-25 minutes. Transfer potatoes to a bowl and let cool slightly. Add the honey, eggs, and spices and mash with the potatoes until blended and spread in prepared baking dish. Mix the brown sugar, pecans and 1/2 tsp. of cinnamon in a bowl and sprinkle over potatoes. Bake until hot and beginning to brown around the edges; 40 minutes.
