3/4 lb. Orzo Pasta
1 Onion, chopped
2-3 cloves Garlic, minced
3 lg. Zucchini or Yellow Squash, grated
2 Tbsp Olive Oil
Thyme
Oregano
1/4 cup Parmesan Cheese
1/4 cup Cheddar Cheese

Directions:
Directions:
Cook Orzo according to package. Heat oil in skillet and lightly saute zucchini, onion, and garlic. Add spices, stirring thoroughly and remove from heat. Add cheese and orzo. Salt and pepper to taste and serve cool or at room temperature.
