2 cups Cracker or Bread Crumbs
2 Tbsp. Butter
3-4 cups Zucchini, diced
2 Tbsp. Butter
3 Eggs
1 Onion, diced
1/2 cup Milk
1 cup Cheddar Cheese, shredded
1/2 tsp. Salt
1/2 tsp. Pepper
1/4 cup grated Parmesan Cheese

Directions:
Directions:
Preheat oven to 350º. Grease 9" square or deep dish pie pan. Melt 2 Tbsp. butter and mix with bread crumbs in baking dish pressing to cover the bottom.

In skillet, melt 2Tbsp. butter and saute zucchini and onion just until slightly tender. Spread evenly over bread crumbs.

Whisk eggs and milk together. Add salt, pepper, and 2/3 cup cheddar cheese. Pour over the zucchini and sprinkle with remaining cheese.

Bake 35 minutes or until golden on edges.
