1 medium head of cauliflower, chopped
1 tsp. olive oil
1 Tbsp. Butter
1 cup Onion, chopped
2-3 cloves Garlic, minced
1 Tbsp. fresh Parsley
1/4 cup Sour Cream
1/2 tsp. Salt
1/8 tsp. Pepper
1/4 cup Asiago Cheese

Directions:
Directions:
Steam or boil cauliflower until very soft and drain well.

Meanwhile in a large saucepan over medium heat, melt butter and olive oil together. Saute onion 5-7 minutes and add garlic and parsley and saute for 1 more minute. Stir in sour cream, cauliflower, salt and pepper mashing lightly. add cheese and serve.
