3 eggs, whisked
3/4 c almond milk
2 tbsp honey
1 tsp vanilla
Zest of 1 lemon
Juice of 1 lemon
1/2 c coconut flour
1/2 c tapioca or arrowroot flour
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
2-3 tbsp poppyseeds

Directions:
Directions:
Whisk together wet ingredients: eggs, almond milk, honey, vanilla, lemon zest and juice in a large bowl. Then while continually whisking add coconut flour, tapioca flour, baking powder, baking soda and salt to the large bowl. Once the batter is well combined add poppyseeds. Grease a large pan and place over medium heat. Once the pan is hot, use a ladle to pour in the pancakes. The batter should make 9-12 pancakes depending on the size. Once the pancakes start to bubble you can flip them over. About 2-3 min per side.
