6 ears of corn on the cob, husks pulled back and tied with butcher's twine, silk removed...
1/4 cup mayonnaise...
1 T fresh lime juice...
1/2 t chili powder...
1/2 t smoked paprika...
1/4 cup crumbled Cotija or finely grated Parmesan cheese, I prefer the Cotija cheese...
Directions:

Heat a grill to medium...
Rinse husks of corn in cold water until thoroughly wet....
Grill corn 10 minutes or until slightly charred, turning occasionally...
Transfer corn to a cutting board, let it cool slightly...

While cooking corn on grill, mix mayo, lime juice, chili powder, smoked paprika and 1/4 t salt...

Brush this mixture over all ears of corn...
Now place cheese in a long, shallow dish and roll each ear of corn in mixture and serve...
You may have to press the cheese to adhere to the ears of corn...
