Nonni's Spaghetti Gravy Recipe

2 mild Italian sausages
1 lb,.Lean ground beef
2 medium onions, chopped
1/4 pound mushrooms sliced
1 small green pepper
4 celery top(leaves) chopped
1 can tomato sauce (8 oz)
1 lg. can of Italian -style pear shaped tomatoes (1lb 12 oz)
1 bay leaf
1tsp. of sugar, rosemary, oregano, and thyme
2 tsp dried basil leaves
1 large carrot, finely chopped
1/4 cup minced parsley
2 c. red wine or vermouth


Brown beef and sausage and set aside. In same pan saute onion and garlic, add mushrooms, add green pepper, celery, carrot, wine, tomato sauce add tomatoes (break with a fork). Return meat to pan and add bay leaves, sugar, rosemary, oregano, thyme, basil, allspice, parsley and pepper. Simmer, uncovered until it cooks in thick sauce for 1-2 hours.
