4 large russet potatoes
1/2 onion
1/2 green pepper
2 c. Milk
1/4 c. Butter
1/4 c. Flour
1/2 tsp. Salt

Directions:
Directions:
Slice potatoes 1/8 to 1/4 -inch thick. Slice onion and green pepper in thin slices. Place ingredients in pot with water and gently boil. Grease a 9 x 13 corning ware dish and set aside. Make a white sauce by melting butter in a pan. Whisk in flour until smooth and gradually add in milk. Cook until sauce thickens. Add salt, pepper and 1 cup cheese. Remove potatoes, onion and green pepper and place one layer in the dish. Pour white sauce over first layer. Place the remaining potatoes, onion and green pepper on top and add the rest of the white sauce. Sprinkle the rest of the cheese on top. Bake at 350° for 30 to 45 minutes
