3/4 c. milk
2 T. white vinegar (see note)
1 c. flour
2 T. white sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
2 T. melted butter
1 tsp. vanilla

Directions:
Directions:
Combine the milk and vinegar in a small bowl for 10 minutes to sour. (NOTE: you can use regular buttermilk, but for some reason this is better.)

Combine the dry ingredients in a bowl. In a smaller bowl, whisk the milk, egg, vanilla and melted butter. Pour into the dry ingredients and whisk until most of the lumps are gone. Let sit for 10 minutes until bubbles appear. Put on your griddle and enjoy!
