1/4 tsp allspice
1/4 teaspoon ground nutmeg
1/2 boiling water
1 1/4 c. sweet potato mashed (Approx. 2 med potatoes)
1/2 cup white sugar
2 eggs, beaten
1/2 tsp salt
3 tbsp butter
1 c evaporated milk
1 (9 inch) unbaked pie crust
Whipped cream topping

Directions:
Pierce the sweet potato skin 5-6 times with fork. Place on a microwaveable plate and microwave for 5-8 minutes, rotating halfway through.Remove the skin. Break apart sweet potato in a medium pot.
Mix spices in with boiling water. Add to sweet potatoes. Add sugar, eggs, salt and butter, and mix well with mixer. Stir in milk and heat mixture ove a very low heat for about 5 minutes, stirring constantly. Pour filling into an unbaked pie crust and bake at 425ºF for about 20 minutes, or until knife inserted in center comes out clean. Cool and serve with whipped .
