MEAT SAUCE
• ¾ lb ground beef
• 2 cups salsa
• 1 cup beef stock (or 1 tsp Better than Beef Bullion with 1 cup hot water)
• ½ cup brown rice
• ½ can of black beans
• ½ small can of sweet corn
• ½ large onion diced
• 1/2 bell pepper diced
• ½ stalk of diced celery

SHELL AND TOPPINGS
• Pre-formed taco shell bowls from grocery store**
• shredded lettuce
• chopped tomatoes
• grated Cheddar cheese
• sour cream

Directions:

1. Cook ground beef and drain off grease
2. Cook brown rice in boiling water. (Run rice in colander under hot water to remove starchiness)
3. Dice up onions, bell pepper and celery. Put in skillet and cook on stove.
4. Add cooked ground beef, salsa, beef stock, cooked brown rice, beans, and corn in a large pot to cook on the stove (dutch oven). Cook 1 hour or more to ensure all ingredients are well blended.
5. If you don’t have the time or patience, put the cooked ingredients in a pressure cooker and cook for 10 minutes under “stew”.
6. If you don’t have a pressure cooker, just cook as long as you can and serve. The ingredients won’t be as saturated with flavor, but it’s still good.
7. Get a pre-formed taco bowl and heat in oven at 350 for 3-5 minutes until warm.
8. Spoon the beef mixture into a taco bowl. Top with the cheddar cheese first, then shredded lettuce, tomatoes, and sour cream.

**To make your own taco bowl…. Spray a medium sized metal bowl with cooking spray. Place a 12-inch (burrito size) tortilla inside the bowl. Bake in the oven at 375ºF for about 10 minutes until tortilla is crispy and starts to brown
