8 slices bacon
1 onion, diced
1/2 c. flour
3 (14.5 oz) cans chicken broth
5 potatoes, baked, peeled and diced
1 tsp. dried parsley flakes
2 c. half and half
1 c, sharp cheddar cheese, grated
1 c. sour cream
Salt and Pepper to taste

Garnish:
Cheddar Cheese
Sour Cream
Bacon, cooked
Chives

Directions:
Directions:
In dutch oven - cook bacon until crisp. Remove and crumble. Saute onion in bacon drippings until tender. Add salt and pepper. Stir in flour and cook for 1 minute, stir constantly. Slowly add chicken broth; cook stirring constantly until thick and bubbly. Add potatoes, parsley, half and half; cook for 10 minutes. Stir in cheese and sour cream. Garnish and serve.
