1 14 oz. can artichoke hearts, drained and chopped
1 4 oz. jar pimentos, optional
2 4 oz. cans green chilies, drained and diced
1 1/2 cups mayonnaise
4 oz. shredded Monterey Jack cheese
Additional Parmesan cheese for topping

Directions:
Directions:
Preheat oven to 325 degrees. Drain pimentos and reserve 2 t. for garnish. In a medium bowl, mix pimentos, artichokes, mayonnaise, green chilies, cheese and 1/2 cup Parmesan cheese. Spread mixture into shallow 1 1/2 quart baking dish. Sprinkle with additional Parmesan cheese and 2 t. pimentos. Bake uncovered 30 minutes until bubbly.
