1/2 cup flour
1 tablespoon sugar
1/4 teaspoon cinnamon
2 large eggs
3/4 cup milk
Butter
Assorted berries, chocolate chips, and other fillings as desired

Directions:
Directions:
Combine all ingredients and mix with electric mixer until blended into a smooth batter. Cover and let stand at room temperature for 15 minutes. Melt 1/2 tablespoon butter in a crêpe pan or other non-stick skillet. Pour 1/3 cup of crêpe batter into pan, rotating the pan as needed to fully coat the pan. A crêpe spreader can also be used.

Cook over medium heat for approximately two minutes. Crêpe should become solid and the bottom should be lightly browned. Use a spatula to loosen the edges and flip the crêpe. Cook other side for two minutes. While second side cooks, place sliced fruit, chocolate, and other desired fillings into the center of the crêpe. Cover toppings by flipping both sides of the crêpe over the center (folding the crêpe into thirds).

Remove from heat and garnish with whipped cream or powdered sugar.
