1 cup Yellow Corn Meal

1 large onion
1 stick butter or margarine
1 whole chicken cut up
1 can tomato sauce
1 can chopped tomatoes
2-3 potatoes, cut up
2 carrots, cut up
1 small can mushrooms

Directions:

Polenta--
Heat 3 cups water to boiling in saucepan. Mix 1 cup yellow cornmeal, 1 tsp salt and 1 cup cold water. Pour into boiling water, stirring constantly. BE CAREFUL-- YOU CAN GET BURNT WHEN IT STARTS TO BOIL AND POPS UP!!! Cook until thickened, stirring constantly. Serve with chicken stew.

Chicken Stew--
Saute onion in large fry pan with butter. Add cut up chicken and cook until golden brown over low heat. Then add tomato sauce, 1/2 can water, chopped tomatoes. Simmer for about 30 minutes. Add potatoes, carrots and mushrooms. Cook for another 30 mins or until done -- can also be made in large roasting pan and bake in oven until tender.
