10 cups cucumber
4 cups onions
4 Chopped hot peppers (I use what I grow. Any combination of hot or medium hot peppers)
5 Tbs course salt
2 1/2 cups white vinegar
1 cup sugar
1 tsp turmeric
1 tsp celery seed
2 tsp dry mustard
Red chile flakes to taste

Finely dice cucumbers, onion and peppers. Stir in salt and let sit overnight. Rinse and drain in the morning. Add remaining ingredients and put in large pot on stove. Cook over medium until it comes to a bubble. Simmer for 30 minutes stirring frequently. This is when I would add the chile flakes if I wanted it spicier. Pour into sterilized jars (5 pints). Place jars in canner. Bring to boil and time for 10 minutes after they begin to boil.
This is an easy recipe to make a small batch of. Store in the fridge and you can skip the processing in the canner.
