1 lb chicken breasts
1 each green, yellow red pepper chopped
1 med onion chopped
2T olive oil
3 C water
2 C frozen corn
1 C uncooked brown rice
1 C green enchilada sauce
1 sm can chopped green chilies
1/4 tsp salt
1 C Mexican shredded cheese
1 C Sour Cream
Tortilla chips

Directions:
Directions:
Cook the chicken, onions, peppes in oil until veggies crisp tender. Add water, corn, rice, enchilada sauce, chilies and salt. Bring to a boil. Reduce heat and simer for 35-40 min or until rice is tender. Stir in sour cream service sprinkle with cheese and chips on top.
