"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
2 boxes of Jiffy corn mix
2 cans of cream corn
2 cans of no salt regular corn. Drain all of the water from these two cans.
1 stick of real butter.
16 oz. of real sour cream
Cooking spray
9 inch square baking pan - glass is preferred

Directions:
Directions:
Soften butter to room temperature. Do not melt in microwave. It makes the pudding runny. Mix all ingredients into a bowl. Gently fold until well blended. Spray your pan, pour contents into the pan, cook at 350º for 35-45 minutes. Give it the ol' toothpick test. If it comes out clean, it's ready, if it doesn't, put it back in for another 10 minutes.

Personal Notes:
It's a wonderful Thanksgiving treat and it goes well with so many different dishes. Please do not add eggs. The pudding should be firm. Make Pauline proud and think of her when you eat this delicious side dish!
