2 1/2 c flour
3/4 c sugar
3 tsp bkg powder
1/2 tsp cardamon (fresh best)
1/2 tsp salt
1/2 c butter well chilled
1 c creamy cottage cheese
1 egg
1 tbsp vanilla
1/2 c raisins 3 tbsp butter melted

Directions:

Sift all dry. Cut butter in till coarse crumbs form. Mix together c cheese, egg, vanilla. Add with raisins to flour mix. Stir till dough forms. Turn onto lightly floured board and kneed about 10 times. Add more flour if necessary to prevent stickiness. Dough should be soft not stiff.
Roll dough into 10" circle - brush with melted butter. Fold in 1/2 just off center, greased cookie sheet. Bake till golden brown. Brush with remaining butter when hot.
Cool wire rack. Fridge when completely cool. Store 2 days before serving. Keeps up to 1 week.

I have been making this at Christmas since Kirk and Leanne were very small. A Canadian Living recipe I think? In recent years Kirk has taken over baking this and he will often make one recipe without raisins for Leanne who does not like them.
