1 c. cornmeal
2 eggs, well beaten
1 c. milk
1/2 tsp soda
3/4 tsp salt
1 can Mexican Corn
1/2 lb ground meat (sauteed and drained)
1 lg. onion, chopped
1/2 lb. cheese, grated
4 jalapeno peppers, finely chopped
oil

Directions:
Directions:
Combine all ingredients. Take a large cast iron skillet and place enough oil to coat bottom and sides. Place skillet on stove and heat until warm. Sprinkle skillet lightly with cornmeal. Pour in batter and bake at 350º for 1 hour.
