1/2 cup (1 stick) butter
1/4 cup chopped onion
2 cups cream
1/2 cup milk
2 cups sour cream
1 teaspoon salt
1 teaspoon pepper
2 pounds potatoes, peeled and grated
2 cups (8 ounces) shredded Monterey Jack cheese (optional)

Directions:
Directions:
Combine the butter, onion, cream, milk, sour cream, salt and pepper in a saucepan. Bring to a simmer, but do not boil. Combine the potatoes and cheese in a buttered baking dish. Pour the hot milk mixture over the top. Bake at 325 degrees for 1 hour or until tender and golden brown.

Yield: 10 servings
