40 ounces extra-sharp Cheddar cheese, shredded
1 (8 ounce) jar pimentos, chopped
2 cups mayonnaise
1/2 red bell pepper, finely chopped
2 tablespoons lemon juice
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
3 garlic cloves, minced

Directions:
Directions:
Combine the cheese, pimentos, mayonnaise, bell pepper, lemon juice, mustard, Worcestershire sauce, cayenne pepper and garlic in a large bowl. Stir to mix well. Cover and chill; the spread will thicken when it is thoroughly chilled. Use as a sandwich spread or to fill celery sticks or cherry tomatoes.

Yield: 4 pounds
