16 large mushrooms, cleaned
2 tablespoons olive oil
6 ounces sweet Italian sausage, casings removed
1 garlic clove, minced
2 tablespoons finely chopped parsley
1/4 cup (1 ounce) grated Parmesan cheese
1/4 cup water
1 tablespoon olive oil

Directions:
Directions:
Remove the stems from the mushrooms and chop the stems. Heat 2 tablespoons olive oil in a skillet. Add the chopped musgroom stems, sausage and garlic and saute until the sausage is cooked through. Remove from the heat and stir in the parsley and cheese.
Stuff the mushroom caps with the sausage mixture. Pour the water and 1 tablespoon olive oil into a baking dish. Place 350 degrees for 20 minutes.

Yield: 16 mushrooms
