500gm onions, thinly sliced
3 tbsp. olive oil
8 eggs
1/2 cup grated parmesan cheese
1/2 cup breadcrumbs
1 tbsp. chopped parsley
Salt & pepper to taste.

Directions:
Directions:
Spray with oil a ring form dish about 25cm. in diameter. In a pan heat up the oil and gently fry the onions until soft, do not allow to burn. Set to one side and then in your mixing machine, beat the eggs, then add the cheese, breadcrumbs and parsley. Add the cooked onions, season with pepper and salt. Pour the mixture into the pan and cook for 15 - 20 minutes at 180c Serve with a side salad. or until nicely browned. Test for doneness. Allow to cool then cut into slices and serve. It is also good when cold.
