3 cups coarsely grated unpeeled zucchini
3 tablespoons chopped parsley
1 large clove garlic, minced
1/2 cup grated parmesan cheese
1 egg beaten
1 cup biscuit mix salt and pepper cooking oil

Directions:
Directions:
Mix together zucchini parsley garlic cheese and beaten egg. Add biscuit mix, salt and pepper. Heat heart fry pan with small amount of oil. Drop from tablespoons into hot oil. Cook until golden brown on both sides. Drain on paper towels. Serve with apple sauce or plain. Can be frozen
